ARTICHOKE RECIPE
Try something different : Artichoke Benedict
4 medium artichoke
4 slices bacon
4 eggs
Hollandaise sauce (bought or made)
Prepare and cook artichokes as follows:
Wash artichokes under cold running water. Cut off stems at base and remove small bottom leaves. Stand artichokes upright in deep saucepan large enought to hold snugly. Add 1 teaspoon salt and 2-3 inches boiling water (lemon juice, herbs, garlic powder or onion powder may be added). Cover and boil gently for 35-40 minutes or until the base of the artichoke can be pierced easily with a fork (add a little more boiling water if needed). Turn artichokes upside down to drain. Cool completely, cover and refrigerate to chill.
Brown bacon slices. Poach eggs in boiling salted water, Spread leaves of artichoke open like petal flowers Remove centre leaves and fuzzy centres from artichokes and discard. Place bacon slices into artichoke centres, covering bottom and top with poached eggs. Spoon on hollandaise sauce and serve immeadiately.
